Executive Chef Tim Duque
Born and raised in Miami, Florida, Executive Chef Tim Duque first became interested in the culinary field during a trip to Italy at the age of fifteen. Inspired by the pizza and simplicity of their food, Tim found his calling and later attended Johnson and Wales University, North Miami, and graduated Summa Cum Laude. Upon graduation, Chef Duque worked at the Westin Diplomat Resort and Spa while also working as a private chef in Gables Estate. Determined to one day run a Bed & Breakfast specializing in farm to table cuisine, he progressed quickly from line cook to restaurant supervisor, Banquet Sous Chef, Garde Manger Chef and eventually Banquet Chef. Rounding out his culinary skills, Chef Duque also received a Sommelier Certification and served as the Sustainability Champion for the Westin Diplomat. Next Chef Duque headed to, the Sheraton Dallas, serving as the Executive Sous Chef. After successfully leading the culinary team in Dallas for one year, Tim returned home to Florida choosing South Seas Island resort and serving as Executive Sous Chef. In his time at South Seas, Chef Duque redesigned the banquet and restaurant menus – infusing his love of South Florida, Caribbean infused dishes – and delighting brides, meeting planners and guests.
When not creating delectable dishes, Tim enjoys shelling on Sanibel, playing Frisbee golf, and photography.
